A Legacy That Still Gathers Around The Table

How It Started

Where the Trapp Began

The Rollin’ Trapp is more than a food truck—it’s the continuation of a dream.

Our dad, Alphonso Kincey, Jr., was a man of unwavering faith, a devoted husband and father, and someone who believed the best conversations happened around a table filled with good food. Alongside our mom, Chris Ann, he built a home where family, friends, and neighbors were always welcome. Whether he was serving his legendary barbecue or frying catfish, food was his way of showing love.

I remember Daddy always joking about opening his own restaurant in one of our old family homes that sat on a hill. He’d say maybe he’d call it something like “The Trapp” — simply because once people got a taste of the good food being served, they’d definitely be trapped!

Daddy gained his heavenly wings in May 2009, never getting to see that restaurant come to fruition.

But that’s not how this story ends… in 2020, through what we can only describe as a God-inspired moment, we felt called to carry his dream forward. We chose a food truck because it allowed us to bring people together wherever we go, one meal at a time.

Today, our dad’s picture proudly rides on the side of our trailer, and the Scripture displayed beside it—“For with God nothing shall be impossible” (Luke 1:37)—reminds us daily that this dream exists because of God’s faithfulness.

While you’ll usually find us serving customers, our mom is still very much part of the story. Her beloved Mama’s Cornbread Dressing has become a customer favorite, and she still shows up to cheer us on, just as she always has. In many ways, every plate we serve carries a little piece of both of our parents’ love.

From our family to yours, thank you for allowing us to share not only great Southern food, but a legacy of faith, family, and hospitality. We’re honored to have you at our table.

The truth is, it isn’t a secret recipe or a special blend of seasonings. The secret has always been the heart behind the food.

It’s the faith our parents built their home upon, the love they poured into every meal, and the belief that food has a way of bringing people together. It’s our dad’s dream, our mom’s traditions, and a family legacy we’re honored to continue every day.

It’s treating every customer like family, serving with excellence, and honoring a legacy that began long before our food truck ever hit the road.

That’s the secret.

And we’re grateful to share it with every plate we serve.

Some of the recipes we serve have been shared around our family table for generations. One of our customers’ favorites, Mama’s Cornbread Dressing, comes straight from our mom, Chris Ann, whose love for cooking and bringing people together continues to inspire everything we do.
